Laura’s Chicken Parm “Muffins”

  1. Preheat oven 400.
  2. Spray muffin pan with cooking spray.
  3. Mix first 9 ingredients till combined.
  4. Fill each cup 1/2 way, don’t pack.
  5. Nestle a mozzarella  cube in middle of each.
  6. Top with more chicken mixture.
  7. Cover each with bread crumbs and drizzle with olive oil.  Bake 35 minutes or until meat reaches 175 – 180 degrees.
  8. Serve over tomato sauce.
