This confusing cut is known as a Ball Tip roast east of the Mississippi and a tri-tip on the West side. The only cut of beef that actually expands as it cooks, tri-tip is featured in BBQs and delis across the land. While it is not actually a new cut of beef, it will certainly be a hit on your backyard grill!
